Weekend mornings are the best for preparing healthy meals. This
morning I got this amazing idea. It took me about 10-15 minutes from the beginning
to this delicious breakfast.
In a frying pen add some drops of corn oil, heat it up on a
medium temperature, add ¼ cup of diced onions, ½ cup of diced red bell pepper, ½
cup of corn and fry for 3-4 minutes. Add two eggs, mix it all up and let it sit
on a stove. If you eat salted eggs you can add a pinch of salt. When the eggs
are almost done add a fistful of chopped rukola leaves. Mix it for a minute and
serve on a plate. Top it off with some shredded cheese.
